Gwitterchäs®, one of our best-selling and multi-award-winning cheeses, is going on a journey. It has been repackaged and renamed for the North American market – but it hasn't been remade. Under the name Knock Out! we are bringing our original cheese with its typical creamy maturity and stormy, spicy character across the Atlantic – in a design reminiscent of the craft world: fresh, artisanal, confident.

Why Knock Out!?
The story behind this cheese reads like an adventure: During a violent thunderstorm, the power went out in our cheese dairy. In the rush, too much cream was accidentally added to the curd – actually a production error. But instead of throwing it away, we let it mature. The result blew us away: a cheese with an intense umami flavor, fine ripening crystals, and a velvety texture. The name was obvious: Knock Out!
Export quality with a Swiss soul
With a minimum maturation period of 210 days, 55% fat content, and produced using the finest craftsmanship in our family cheese dairy, Knock Out! is a prime example of affinage at the highest level. The recipe remains unchanged from Gwitterchäs® – only the appearance has been adapted for the English-speaking market. After all, Gwitterchäs® is neither pronounceable nor marketable in America. Knock Out!, on the other hand, hits the mark – or rather, right at the heart of the gourmet scene.
